To Make Egg
Roast
1. Oil – 1 tsp
2. Salt – ¼ tsp
3. Turmeric powder – ¼ tsp
4. Chilli powder – ¼ tsp
5. Boiled Eggs – 6 Nos
To Make Onion Egg Masala
Oil - 3 Tbsp
Onion - 3
Nos Chopped
Green Chilli
- 3 Nos Chopped
Ginger
Garlic Paste - 1 1/2 Tsp
Turmeric
Powder - 1/4 Tsp
Salt - 1 Tsp
Chilli
Powder - 3 Tsp
Coriander
Powder - 1 Tsp
Cumin
Powder.- 1 Tsp
Water - 1
Cup
Garam Masala
- 1/2 Tsp
Coriander

Method
1. To a pan, add oil,
salt, turmeric powder and chilli powder. Roast the spices and keep it aside.
2. Make a few slits in
the boiled eggs and add them to the pan
3. Roast the eggs for 3
mins and turn off the stove.
4. To a pan, add oil and
onions.
5. Fry the onions till
they turn slightly transparent.
6. Add green chilies and
ginger garlic paste to this.
7. Next add turmeric
powder, salt, red chili powder, coriander powder, cumin powder and mix
everything.
8. Add water to cook the
masala on medium flame for 5 mins.
9. Once the masala is
cooked, add garam masala and mix well.
10. Then add the roasted
eggs.
11. Mix it all gently.
12. Add some freshly
chopped coriander to the curry and mix.
13. Spicy onion egg
masala is ready to be served with roti, phulka or any flavoured rice.
