Best Dum Chicken
Ingredients:
5 garlic cloves
3 green chilies
1-inch ginger
1.2 kg of chicken pieces
12 cashews
10 almonds
¼ cup desiccated coconut
¼ cup fresh coriander and mint
1 ½ tsp red chili
¾ tsp turmeric
1 ½ tsp coriander
1 ½ tsp garam masala
1 ½ tsp salt
3 tbsp plain yogurt
¾ tsp pepper
¾ cup friend onions
4 tbsp cooking oil
Instructions:
1. Blend garlic, green chilies, and ginger with a splash of water
2. Add the paste to chicken pieces
3. Blend cashews, almonds, desiccated coconut with a splash of
water
4. Add the fine paste to the chicken
5. Add fresh chopped coriander and mint
6. Add red chili, turmeric, coriander, garam masala, salt, and
plain yogurt
7. Mix well then add pepper and fried onions
8. Gently mix again then marinate for a minimum of 15 minutes
9. In a pan, drizzle cooking oil and cook the chicken pieces for 5
minutes on high heat with the lid on
10. Place pan on top of another flat pan and cook for 15 minutes
on low heat with the lid on
11. Remove lid and stir then cook for another 35 minutes on low
heat with the lid on
12. Garnish with fresh herb before serving
